Why You’ll Love This High Protein Beef Stroganoff
This high protein beef stroganoff hits that perfect balance of comfort + nutrition:
Protein-packed: Sirloin steak and Greek yogurt boost protein content to help support muscle repair, workout recovery, and fullness.
Rich + creamy (without feeling heavy): Greek yogurt adds creaminess while reducing saturated fat compared to traditional versions.
30-minute weeknight meal: Minimal prep and straightforward steps mean dinner isn’t complicated.
One-skillet cooking: Less mess, fewer dishes, and maximum flavor from browning.
Customizable: Works with different pasta, veggies, or protein swaps.
Ingredients You’ll Need
Here’s everything required to make this high protein beef stroganoff taste rich and satisfying:
Sirloin steak (thinly sliced): Tender, lean protein source that supports satiety and muscle health.
Egg noodles: Ideal texture for stroganoff and they provide carbs to fuel your brain.
Mushrooms: Add depth, umami, and antioxidants while boosting fiber.
Onion + garlic: Aromatics that build a flavorful base; both contain compounds that support immune function.
Beef bone broth: Intensifies the savory flavor.
Greek yogurt: Increases protein and creates the creamy sauce without heavy cream.
Dijon mustard: Balances richness by adding brightness and subtle tang.
Olive oil: Heart-healthy monounsaturated fats for cooking.
Salt + pepper: Enhance flavor.
Fresh parsley (optional): Adds a pop of color, vitamin C, and fresh herb flavor.
How to Make It
This recipe comes together quickly:
Heat olive oil in a large skillet over medium-high heat. Then sear the beef slices for about 3 minutes, then remove once browned. Sauté onion, garlic, and mushrooms in the same pan until softened (about 5 minutes).
Return the beef to the skillet and pour in bone broth and simmer for 5 minutes. Then reduce heat, stir in Greek yogurt and Dijon mustard, and cook until creamy. Meanwhile, cook egg noodles according to package directions and drain.
Serve the creamy beef mixture over noodles and garnish with parsley!
How to Serve It
You can style this high protein beef stroganoff in several delicious ways:
Classic: Ladle over egg noodles with fresh parsley.
Veggie-forward: Pair with roasted broccoli, carrots, green beans, or Brussels sprouts.
Over whole grains: Swap noodles for brown rice, farro, or barley to boost fiber.
Bulk it up: Add peas or spinach directly into the skillet before serving.
With a crunch: Enjoy with a simple green salad and lemon-olive oil dressing.
How to Store It
Store leftovers in an airtight container in the refrigerator for 3–4 days.
Reheat gently over low heat and add a splash of broth if needed to loosen the sauce.
To freeze: For best texture, freeze the beef mixture separately and add Greek yogurt after thawing/reheating.
